Temperatures

An interesting thing about eggs:

Egg white solidifies between 140ºF and 149ºF, and the egg yolk will coagulate between 149ºF and 157ºF. This temperature is much lower than the boiling point of water (212ºF).

Translation in Celsius is like this:

Egg white solidifies between 60ºC and 65ºC, and the egg yolk will coagulate between 65ºC and 69.5ºC. This temperature is much lower than the boiling point of water (100ºC).
